Other Delicious Flavor Combinations to Try:
SIMPLE INGREDIENTS:
  • 1 packet of Fat Free, Sugar Free Jell-0 Instant Pudding Mix
  • 12-14 ounces (1 & 1/2 – 1 & 3/4 cups) fat free skim milk

INSTRUCTIONS:

*Pour fat-free skim milk into large mixing bowl
*Add 1 packet of Fat Free, Sugar Free Jell-O Instant Pudding Mix
*Mix well (preferably with electric mixer)
*Carefully pour or spoon into standard size popsicle molds 
*Freeze and enjoy!

No-Bake Peanut Butter Balls

It is currently pushing 90 degrees inside my house.  Hold me.   Wait.  I take it back.  Don't touch me.  

Go cook something.  I found this on USP Labs – No Bake Peanut Butter Balls

Intriguing.  Maybe I'll have the kids make it to keep busy for five minutes whilst we melt.

Ingredients:

  • 1 cup natural peanut butter
  • 1 scoop vanilla  (...a favorite right here!) or chocolate protein powder
  • 1/2 cup whole oats
  • 1/2 cup chopped dates or blueberries
  • 2-3 Tbsp. dairy or coconut milk 

Directions:

Combine ingredients in a large bowl, adding enough milk until a doughy consistency is reached. Roll into bite-sized balls and refrigerate until served.

Yields 12 balls

Per ball:

  • 151 kcal
  • 7.8 g carbs
  • 10 g fat
  • 7.8 g protein

Doing without your favorite foods simply won’t do, as that’s something absolutely unheard of in the Stella home! For instance, we found a new favorite when we substituted that nameless high-carb root vegetable with healthy and light, yet filling, cauliflower. And even better, we piled them high with the best ingredients we could find!

Prep Time: 15 minutes – Cook Time: 6 minutes – Serves 4

Shopping List

  • 1 medium head cauliflower
  • 1 tablespoon cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon minced fresh garlic
  • 1/4 teaspoon chicken base or bouillon
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon chopped fresh or dried chives, for garnish
  • 3 tablespoons unsalted butter, if desired

Preparation

  1. Bring a large pot of water to a boil over high heat.
  2. Clean and cut cauliflower into small pieces. Add to the pot and boil for about 6 minutes until well done.
  3. Drain well, but do not let cool. Pat the cooked cauliflower between several layers of paper towels or place cauliflower in a colander and use a heavy bowl to press down on it to remove the excess water.
  4. Using a food processor or hand blender, pulse the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base and pepper until almost smooth.
  5. Garnish with chives and serve hot with pats of butter, if desired.

Mr. has a new go-to drink.   He's been working out – and drinks this right after the gym.  This recipe is based off of a sugary-drink the gym makes.  

The kids BEG for it.  #winner.
